1 packet of Kashi Pilaf cooked in vegetable broth
3 cups water
2 cups diced zucchini
2 cups sliced mushrooms, fresh or canned
1 cup chopped onions
1 cup thin sliced carrots
1 cup chopped bell peppers
1 cup corn
2 -14oz canned tomatoes, chopped and undrained
1 canned red kidney beans, drained
1 small can chopped green chili's
1 small can tomato paste
2 Tbl chili powder
1 Tbl oregano
1 Tbl cumin
Tbl salt
Tbl pepper
2 large cloves garlic, minced
All vegetables can be fresh or froze. Put all ingredients into a large saucepan. Bring to a boil. Reduce heat and simmer for 30 to 40 minutes. Stir occasionally.

Makes 16 one cup servings.
