Makes 6 servings.

2 cups cooked Kashi Pilaf, set aside to cool
1 1/2 cup cooked, cooled white beans (if canned, rinse)
1/2 cup diced carrot
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/2 cup chopped cilantro
2 green onions, thinly sliced
1/2 cup fat free or low fat Italian dressing
2 tablespoons fresh squeezed lemon juice
salt and pepper to taste
Directions:
Cook Kashi Pilaf according to package directions using vegetable broth instead of water. Combine all ingredients, mix well, and cover. Allow mixture to chill for 24 hours before serving.
