Sweet and Sour Vegetables

Veggies:
1 large onion -- chopped
1 green pepper -- chopped
2 cups broccoli -- chopped
2 carrots -- grated
1 cup water
Sauce:
20 ounces pineapple chunks in juice
1/4 cup brown sugar
2 tablespoons cornstarch
6 tablespoons vinegar
1/4 cup soy sauce

1 tomato -- cut into wedges
5 ounces waterchestnut, canned -- drained

1. Cook veggies for 6 minutes in a large skillet (preferably non stick).

2. Drain the juice from the pineapple and mix juice with remainder of sauce ingredients. Add Sauce to veggies and stir to a boil to thicken.

3. Stir in the pineapple chunks, tomato, and waterchestnuts and heat for 2 minutes.
