This is really good! Try it!

This recipe is an unusual twist on traditional coleslaw. The flavors are similar, but it is made without mayonnaise for a lighter consistency and a fresher taste.

Makes 4 servings: 1 point per serving

1 1/2 cups shredded green cabbage
2 teaspoons white wine vinegar
1 cup shredded carrots
1 teaspoon granulated sugar
1/2 cup slivered red bell pepper
1/4 teaspoon celery seeds
1/2 cup slivered red onion
1/4 teaspoon salt
2 teaspoons olive oil

Prepare grill for a medium fire, using direct method. In medium bowl, combine
cabbage, carrots, pepper, onion, oil, vinegar, sugar, celery seeds and salt. Transfer to center of double layer of heavy-duty, extra-wide foil. Make packet by bringing 2 sides of foil up to meet in center and pressing edges together in two 1/2" folds. Then fold edges of each end together in two 1/2" folds. Allowing room for packet to expand, crimp edges together to seal. Grill vegetables 15-18 minutes, until cooked through. Remove from grill and open packet carefully, as hot steam will escape. Divide evenly among 4 plates and serve.
