    Bow Ties With Spicy Artichoke Sauce

    8 ounces bow tie pasta or rigatoni pasta
    1 pound fresh tomatoes (about 3 medium) -- diced
    1 medium yellow onion -- diced
    1 cup sliced fresh mushrooms
    1/4 cup vegetable or chicken broth
    1 tablespoon garlic -- crushed
    1 teaspoon dried basil
    1 teaspoon dried oregano
    1/4 teaspoon salt
    1/8 teaspoon cayenne pepper
    1/8 teaspoon ground black pepper
    14 ounces canned artichoke hearts -- drained and quartered
    1/2 red bell pepper -- cut into thin strips
    1 tablespoon lemon juice
    1/4 cup + 2 tablespoons grated parmesan cheese

    Cook the pasta al dente according to package directions. Drain well, return to the pot, and cover to keep warm.

    While the pasta is cooking, place the tomatoes, onion, mushrooms, broth, garlic, basil, oregano, salt, cayenne pepper, and black pepper in a large skillet. Place over medium-low heat, cover, and cook, stirring occasionally, for about 10 minutes, or until the tomatoes are soft.

    Add the artichoke hearts, red pepper, and lemon juice to the skillet mixture. Cover and cook for 3 additional minutes, or until the peppers are crisp-tender. Reduce the heat to low.

    Add the pasta to the skillet mixture, and toss gently to mix. Serve hot, topping each serving with some of the Parmesan cheese.

    Dina, I have made this before and it is wonderful! I use roasted red peppers because I love them that way. Thanks for reminding me of a very good meatless entree!
