1 box Dominex frozen breaded eggplant cutlets
olive oil cooking spray
1/2 cup Ragu spaghetti sauce
2 oz. shredded mozzerella cheese
1-2 cans mushrooms, drained

Layer eggplant cutlets evenly in 10-inch glass dish or pie plate that has been sprayed with Olive Oil cooking spray. Spread sauce over top layers of eggplant. Next, spread mushrooms over sauce. Top with an even coating of mozzerella cheese. Bake according to package directions.

DH and I divide this recipe as an entree'. It makes a very filling 8 point dinner!
