    serves 6 3 pt each

    1 1/2 c. whole kernel corn
    8 green onions, chopped
    1 can (15 oz) black beans, rinsed under cold water and drained
    1/3 c. shredded reduced fat cheddar cheese
    1/2 c. reduced fat Bisquick
    1/2 c low fat milk
    1/2 c thick and chunky salsa
    2 eggs or 1 egg and 2 egg whites
    Thick and chunky salsa

    Heat oven to 400 degrees. Grease a 9 x 1 1/4 inch pie plate. (you could use a 7 x 11 dish. In a medium bowl, gently combine the corn, drained beans, and onion; layer mixture in greased pie plate. Sprinkle cheese on top of corn mixture.

    In the same bowl, lightly beat eggs, stir in milk, salsa, and baking mix; using a whisk if necessary, to combine well. Pour into ie plate. Bake 35 - 40 minutes or until tip of knife inserted in center comes out clean. Cool on rack 5 minutes. Serve with salsa.

    Per serving: Calories 190
    Fat 4.2 g Fiber 5 g.

    I used Pam on my dish and used fat free milk. DH loved it.

    Wanted to let you know how much I enjoyed this recipe. I liked the mexican part and DH likes anything with Bisquik
    You get alot too for the points
