Thread: VEGGIE PIE = 6 pts *(?)

    1 9" deep-dish froz pie crust
    2 lg fresh tomatoes, sliced
    1 med onion, thinly sliced
    4 oz low-fat shredded mozarella cheese
    4 oz low-fat crumbled feta cheese
    8 med fresh mushrooms, thinly sliced
    1 pkg froz chopped spinach, cooked & well drained...(squeeze)
    1 egg, scrambled
    1/4 tsp lemon-pepper seasoning
    1 tsp basil
    1/2 tsp dill
    1/8 tsp nutmeg

    Into unbaked crust alternate layers of 3/4 of the cheeses, tomatoes, onions, 1/2 of the mushrooms & herbs/spices into uncooked pie crust.

    Top w/remaining mushrooms & cheeses.
    Pour scrambled egg (or equivalent) over pie.
    Sprinkel w/garlic powder & crushed bk pepper.

    Bake 350 degrees @ 45 mins or until set & lightly bowned.

    Serve w/a tossed garden salad.

    *The 6 pts I figured allows for a generous serving cutting the "pie" into 6ths instead of 8ths.

    Also, I use low-fat cheeses instead of fat-free because they melt so much better.

    This sounds fantastic!! Thanks! I think I will make it this weekend. Do you use any special frozen pie crust?
