    I'm going to try this recipe. Sounds easy to make and it freezes - great for one person. I calculate it at 3 points, but even so it sounds good.

    I wanted to add that this recipe is fabulous! Even my 2 1/2 year old daughter loved this. I substituted frozen corn and it worked just fine.

    I ate some for lunch one day with a 0.5 point corn tortilla and a tiny bit of 2% cheddar cheese and it was sooo yummy!

    I remembered this recipe and couldn't find it in my recipe folder...

    This is FAST, EASY, NUTRITIOUS and DELICIOUS!!

    I "tweaked" it to my family's likes and am printing it out now, so I can always find it for the future.

    I just made this with 8 oz. frozen corn instead of canned, and I used 2 packets of seasoning. It's for my lunch tomorrow.

    I ran it through MasterCook and per serving it's 273 cal, 18 g. fiber, 1 g. fat, or 5 Points ... it does work out to 2 Points on 1-2-3 Success though!

    The above calculation that gets 3 Points assumes 1-1/2 c. cooked lentils. I used 9 oz. dry or 1-1/2 c. dry.

    For me 1 c. is a more reasonable serving anyhow (12 servings per recipe), and that works out to be 136 cal., 9 g. fiber, 1 g. fat, or 2 points.

    Hi,
    I was really impressed by this! Only myself to feed so made only half of the original recipe.
    Am now working on variations. Will post any really good ones that I come up with!

    FYI to all who haven't been around for AGES like some of us. This is a really old recipe, so make sure to calculate points based on new system.
    I still use it all the time. I LOVE IT.

    It's on the first page of this thread ... find where it says 1 2 at the top or bottom and click on the 1...

    I made this a while back and froze it for quick lunches. It's really good!

    I'm not too sure why people aren't looking to the first post in this thread for the recipe, but they obviously aren't. (Given the two recent posts querying what goes in it and where the recipe is).
    So here is the recipe again. This is a direct cut and paste of the original post.

    Vegetarian Chili

    Recipe By : Jim (Dina's Weight Watcher's leader), adapted
    Serving Size : 6 Preparation Time :0:00
    Categories : Vegetarian

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    6 cups water
    1 1/2 cups dried lentils -- (9 ounces)
    1 cup onion -- chopped
    1 can corn (approx. 16 oz.) -- rinsed and drained
    2 cans stewed tomatoes -- (approx. 16 oz each)
    1 6-oz. can tomato paste
    1 packet taco seasoning mix -- (1-1/4 oz.)
    hot sauce -- to taste
    crushed red pepper -- to taste; optional

    Toss everything into a large pot or Dutch oven. Bring chili to a boil. Reduce heat to a simmer. Cover, and let cook for one hour, stirring every 15 minutes to prevent burning. Depending on consistency, add more water as necessary. (Note: I didn't need to add any more water.)

    I use only one and find it to be quite spicy.

    This makes about 3 quarts of chili. So that's 6 servings @ 2 c. each for 5 Points, or 12 servings @ 1 c. each for 2 Points (see my Points calculations in an earlier post).

    This is really good. So good that I've made it twice. I use 2 packets of taco seasonings.

    I freeze it in single portions.

    Man OH Man. I don't mean to repeat everything thats been said. But YUMMMY! That was one of the best 2 pts. I've eaten for lunch in a while. Nice and spicy (I added in tabasco), filling and protein packed. Thanks for the recipe! This is going to be a regular for me, I'm sure.

    I am bumping this up and I am going to make it today. I need something warm and comforting today. I have never had lentils, not even sure what they are, but am willing to try it. I will be adding some TVP, carrots, celery, etc. Hope it as good as you all say. If so, I will have a great dinner after WI tonight and a great lunch tomorrow. Thanks for the recipe.

    Fantastic! I don't think I'll ever eat chili with beans again. This is so much better! I left out the corn and added in some bell peppers and chili seasonings instead of the taco mix. It turned out great, just the thing to have over polenta.

    I made this chili today for dinner and it is MMMM Good!!!!!!! I added some green pepper and some Boca Burger Crumbles and it is so good. I think I will put it in my favorites. Never had lentils before, bu I will try them from now on.It's a definite keeper.

    I just joined BCP and was looking for vegetarian recipes for my 13-year-old daughter. I made this with Taco Bell's Chipolte Taco Seasoning....it is so yummy!! Thanks.
