Roasted Eggplant Parmigana:

Tomato Sauce: Crushed Tomatoes, Tomato Puree, Tomato Paste spiced with garlic, onion, basil, oregano, salt, pepper, pinch of crushed red pepper, pinch of grated parmigan cheese

Peel eggplant, slice it, put on baking rack and lightly spray with olive oil cooking spray. Roast one side and then turn and lightly spray and roast the other side.

Layer baking dish with tomato sauce, eggplant, tomato sauce, grated parmigan cheese, and grated low fat part skim mozzarella, eggplant, parm. cheese, mozzarella.

The points depend on how much cheese you use since the cheeses are the only things that have points. I made a whole baking dish for 15 pts. and divided into 3 servings - 5 pts. each and had 0 pt. salad with it.
