    I'm not sure where I got this - could've been here, but I just made it this week and OMG is it gooooood!!!! (and easy)

    0 points per serving - 6 servings

    6 cups water
    2 cups sliced carrots
    2 T. chopped parsley
    4 cups cauliflower - chopped
    1/2 cup chopped onions
    4 chicken bouillon cubes
    salt and pepper to taste

    In a 5 quart saucepan, add all ingredients. Cover and simmer until vegetables are tender (about 20 minutes.)
    Remove vegetables, place in blender (or food processer) and puree. Put pureed vegetables back in the liquid and reheat.

    That's all there is to it, but it is delicious!! [img]graemlins/wave.gif[/img] If you eat more than the 1-cup size serving I guess you'd have to count the carrots for maybe 1/2 or 1 point, depending on how much you have. But with a 1-cup serving it is 0 points!!

    WW - I'm always on the hunt for yummy zero point soups and this looks delish!!! I think I have all the ingredients and I just may make it up this weekend.

    Cauliflower just went on my shopping list! I can't wait to make this. Sounds so good my kids should even eat it and zero points to boot! Thanks for posting it.

    Cauliflower is on sale this week at the store, & I am thinking I can try this in my VM.

    This sounds soooooooooooo good, I love soup, I even eat it in the summer.

    WOW! I made this tonight, but I ROASTED my veggies(even the onions!) with cooking spray and garlic first. When nice and browned I added them to the already warming broth. I then zapped it with my stick blender and added a bit of salt and pepper. WOW was this ever good, and it made enough for many more servings during the week. In fact I am bringing it to work tomorrow! This is a must try!!

    roasting first sounds like a wonderful idea! I love the flavor the browning a bit gives~!

    WOW this sounds wonderful! I also love roasted cauliflower. In a soup I bet it would be great, can't wait to try it.

    This does sound good and a great way to get in some veggies! I have a question though... dont the carrots count as some pts once cooked? Or is there just not enough in the soup to matter?
