Thread: Chinese Beef

    This was my mom's recipe. I pulled it out today and was pleasantly surprised to find it pretty low in points!!

    Chinese Beef - 6 pts per serving

    1 pound top round steak (or other lean, thin steak) -- cut into strips (counting 1 pt per oz)
    1 teaspoon ground ginger
    1/2 cup soy sauce (or to your taste)
    1 can water chestnuts (sliced)
    1 can bamboo shoots
    1 can bean sprouts
    1 can tomatoes (whole/diced/crushed - your preference - or fresh tomatoes)
    Additional vegetables to your taste - snow peas, mushrooms, onions, etc.
    1 teaspoon cornstarch dissolved in 1/2 cup water
    1 tablespoon minced garlic (or to taste)

    Spray skillet with Olive Oil cooking spray. Add beef, ginger and garlic and cook until beef is browned. Drain half the juice from tomatoes if using canned. Add soy sauce and all vegetables. If you're using fresh tomatoes, you may need to add a little more soy sauce or water to up the liquid. Simmer, uncovered, 10-15 minutes. Add cornstarch/water mixture. Stir and cook until thickened. Serve over white or brown rice.

    4 servings=6 pts per serving

    This makes a BIG BATCH and is very filling.

    You could take the meat out of this and have a REALLY low-point meal. Or substitute chicken. I made it the other night and it was YUMMY!!
