Thread: Chili Relleno Casserole

    This will take about 15 minutes to put together but when it is done baking, you have a terrific main dish that the family raves about. Serve with salad!

    Serves 8
    Points per serving 6

    Ingredients

    1 pound cooked lean ground turkey
    1 cup onion(s)
    1 3/4 tsp ground cumin
    1 1/2 tsp dried oregano
    1/2 tsp garlic powder
    1/4 tsp table salt
    1/2 tsp black pepper
    16 oz fat-free canned refried beans
    8 oz Old El Paso Peeled Whole Green Chilies
    1 cup frozen corn kernels
    1/3 cup all-purpose flour
    1/4 tsp table salt
    1/8 tsp hot pepper sauce
    2 items egg white(s)
    1/2 cup fat-free egg substitute
    1 1/3 cup low-fat milk
    4 oz Kraft 2% Shredded Colby and Monterey Jack Cheese

    Instructions

    Cook ground turkey and onion in a nonstick skillet over medium-high heat until turkey is browned, stirring until it crumbles. Remove from heat; add cumin and next 5 ingredients to skillet. Stir well, and set mixture aside. . Green chilis should be cut lengthwise into quarters. Arrange half the green chile quarters in an 11- x 7- x 1-1/2-inch baking dish coated with cooking spray; top with half of cheese. Spoon bean mixture in mounds onto cheese, add turkey mixture and spread gently, leaving a 1/4-inch border around edge of dish; top with corn. Arrange remaining chile strips over corn; top with remaining cheese. Set aside. Combine flour and ?-teaspoon salt in a bowl; gradually add milk and hot sauce, stirring with a wire whisk until blended. Stir in eggs and egg whites; pour over casserole. Bake, uncovered, at 350 degrees for 1 hour and 5 minutes or until set; let stand 5 minutes. Cut into squares to serve.

    Hi there, This looks good, but what do you mean by "two items" of egg whites? Does this mean the egg whites from two eggs?

    I'll bet it does mean 2 egg whites. It looks like she ran it through a recipe builder and some of them have different ways in describing something that is not an exact measurement. This sounds wonderful and it's now in my "soon to try" file!
