Thread: Oven Baked Beef Stew

    This comes from the Cooking Light board. It was excellent.

    It made 6 servings, and I figured it for 6 points a serving, approx 2 cups each

    Oven Baked Beef Stew
    Source SandyM, Cooking Light Board

    1 Tbsp. oil
    2 lb. stew meat, cut in 1" cubes (I used extra lean, free range beef, and I only used 1 1/2 lbs)
    1/3 c. flour or 1/4 c. cornstarch (I used Wondra)
    1 tsp. salt
    2 tsp. garlic powder (used crushed garlic)
    1 tsp. marjoram (didn't have this - used thyme)
    12 oz. can diced tomatoes, undrained (used the whole 16 oz can)
    10 oz. beef or vegetable broth (used the whole can of beef broth)
    1/2 cup dry red wine (used Merlot)
    2 cups cube peeled potatoes (used 3 cups)
    1 cup sliced celery
    4 medium carrots, sliced (used the whole lb)
    3 small onions, quartered (I chopped 'em and sauteed 'em with the celery and garlic, then threw in the beef to brown)
    1/4 tsp. pepper

    Preheat oven to 325. Heat oil in 4 quart Dutch oven over medium. Brown beef cubes in oil. (I sauteed the celery, onion and garlic til soft, then browned the beef)

    Add flour, salt, garlic powder, marjoram and pepper. Stir in tomatoes, broth and wine; mix well. Bring to a boil, stirring frequently. Add remaining ingredients, mix well.

    Cover; bake for 2 hours or until meat is tender, stirring twice during baking.

    My family loves beef stew so this is definitly something to try. I work all day and this sure would be nice to come home to. Do you think it can be cooked on low in a crock pot?
