Thread: looking for recipe for ham and scalloped potatoes

    My husband is looking to eat some ham and scalloped potatoes-made in the crockpot. I looked in the crockpot and pressure cooker section and could not find. Does anybuddy have a recipe with point information??? Thanks in advance for your help.

    I found this one earlier this morning. It has corn it it but I'm sure you can make it the way you like.

    Crockpot Corn, Ham and Potato Scallop

    6 c baking potatoes, peeled and cut into 1" cubes
    1 1/2 c cooked ham, cubed
    1 15 oz can whole kernel corn, drained
    1/4 green bell pepper, chopped
    2 tsp instant minced onion
    1 10 oz can condensed cheddar cheese soup
    1/2 c skim milk
    2 Tssp flour

    Combine potatoes, ham, corn, pepper and onion in crock pot. In a small bowl mix the cheese soup, milk and flour. Beat with a whisk until smooth. Pour soup mixture over potato mixture in the crockpot. Stir gently to mix. Cover and cook on low 7-9 hours or until potatoes are tender.

    I don't have any points information on this one, but if you use FF or lowfat cheddar cheese and lean ham, along with Campbell's Healthy Request Cream of Mushroom soup, I would imagine the points would be reasonable.

    Ham and Scalloped Potatoes

    Ingredients for 6 servings :
    8 slices Of Ham (Look for some lean slices)
    8-10 Medium Potatoes, thinly sliced
    1 c Grated Cheddar (Try FF or lowfat)
    2 Onions, thinly sliced
    1 can Cream of Mushroom soup (Try Campbell's Health Request soups)
    1/2 teaspoon Cream of Tartar
    1 cup Water
    Salt and pepper to taste

    Toss sliced potatoes in 1/2 teaspoon cream of tartar and 1 cup water. Drain. Put half of ham, potatoes, and onions in CROCK POT. Sprinkle with salt and pepper, then grate cheese Repeat with remaining half. Spoon undiluted soup over top Sprinkle with paprika. Cover and cook on low 8 to 10 hours. (High: 4 hours). From Rival Crock pot cook book, date unknown.
