Tried this yesterday and it was yummy!

Roast Pork with Lemon Pepper Crust

1 Tbsp grated lemon rind (I used my Microplane grater, the best non-electric tool I've ever had)

1 tsp dried oregano
3/4 tsp coarse ground sea salt
1/2 tsp freshly ground black pepper
1/2 tsp olive oil
3 garlic cloves, minced
1 - 1 lb pork tenderloin, trimmed (I used a 2.5 lb pork loin)

Preheat oven to 450. Combine 1st 6 ingredients. Spread over pork. Place pork on rack or broiler pan that's been sprayed with Pam. Bake uncovered at 450 for 25 minutes (for the pork loin, it took an hour and a half), or until a meat thermometer registers 160. Let stand for a few minutes. Slice and serve.
