Thread: Southwestern Meatloaf and Baked Potatoes

    Hi all,

    I made this one for dinner last night and it was very good ~ a nice switch from regular old meatloaf!

    Southwestern Meatloaf and Baked Potatoes
    Servings: 4
    Points per Serving: 9.5

    1 pound 93% lean ground round
    1 large egg white
    1 cup frozen whole-kernel corn
    1/2 cup picante sauce
    1/3 cup regular oats (not instant)
    1/4 cup fresh cilantro or parsley, minced
    1 Tbl. chili powder
    1 1/2 tsp. ground cumin
    1/4 cup ketchup, no-salt added
    4 medium baking potatoes (about 1 pounds)
    1/2 cup fat-free sour cream
    freeze-dried chives (optional)

    Preheat oven to 375. Combine first 8 ingredients in a large bowl; stir well. Shape meat mixture into a 9" x 4" inch loaf on a broiler pan coated with cooking spray. Brush ketchup over meatloaf. Arrange potatoes around meatloaf on broiler pan.

    Bake at 375 for 50 minutes. Let meatloaf stand 10 minutes before slicing. Split potatoes in half lengthwise; top with sour cream. Sprinkle with chives, if desired.

    Yield:4 servings (2 slices of meatloaf, 1 potato and 2 tablespoons sour cream).

    *Note:* To prepare the meatloaf in advance, shape the ground beef mixture into a loaf, wrap in heavy-duty plastic wrap and freeze. Thaw overnight in refrigerator; bake as directed above.

    **If this recipe is made with ground chuck, the fat content increases to 19 grams.

    This sounds good. DH loves meatloaf and I fix the Stovetop Meatloaf that I got here, but this sounds like a winner, too. Plan to try it soon. Thanks
