Thread: Hamburger Casserole

    This one is from the kitchen of my Mom!

    Hamburger Casserole

    2 lbs lean ground beef
    1/2 onion, chopped
    2 cloves garlic, minced
    16 oz tomato sauce
    1 teaspoon oregano
    1/2 tsp pepper
    4 slices fat free American cheese
    3 cups mashed potatoes - either fresh or instant - I usually use instant for speed!

    Preheat oven to 350 degrees. Brown beef, garlic, and onion. Drain. Add oregano, pepper, and tomato sauce. Heat for 5 minutes.

    Place half the meat mixture in a large casserole dish. Layer 2 slices of American cheese over mixture. Add the remaining meat mixture and top with the other 2 slices of American cheese. Ring the casserole dish with mashed potatoes. Bake for 10 minutes until heated through and cheese is bubbly.

    Makes 8 servings

    Sounds so cozy! I'm going to make this, but add a package of frozen mixed veggie in w/ the beef to make it a one dish meal. I'll let you know how that works out!
