    I got this from allrecipes.com. I made a few modifications and voila!

    Beefy Spanish Rice
    Cooking spray
    1 cup uncooked converted white rice (11)
    1/2 cup chopped onion (.5)
    1/2 cup chopped green bell pepper (0)
    1 pound lean ground beef (22)
    1 cup canned corn (2)
    1 (6 ounce) can tomato sauce (0)
    1/4 cup ketchup (1)
    1 cup water
    salt and pepper to taste
    garlic powder to taste
    hot sauce to taste (optional)

    Spray a large saucepan with cooking spray. Heat over medium heat. Add the rice, onion and bell pepper and saute for 5 minutes, or until onions are tender. Add the ground beef and saute until browned. Drain excess oil and fat.

    Add the corn, tomato sauce, ketchup and water. Reduce heat to low, cover and simmer for 20 minutes or until rice is cooked, stirring occasionally. Season with salt, pepper and garlic powder to taste.

    6 servings; 6 points

    Note: I cut down the beef to 1/2 a pound for 11 points, making the meal 4 servings at 6 points. It's really tasty!!

    How big is the serving size for 4? Just wondering cuz I always measure mine out first before I feed the family. thanks [img]graemlins/wave.gif[/img]

    When a recipe doesn't list the exact measurement for servings, your best bet is just to divide it evenly into four servings by using a 1/2 cup measure. That's what I do with this one. Sorry I can't be more help!

    This looks good to me. I am going to make it for dinner, using my Morningstar Veggie crumbles instead of beef. I'm also going to refigure it with the substitute over at M/C.

    I made this tonight with the veggie crumbles instead of beef, and it was delicious! It made 8 cups. Really yummy!

    Glad you enjoyed it! I haven't tried it with the veggie crumbles yet but I definitely will next time around.
