    Sassy Meatloaf

    Simply the Best Cookbook

    Makes 6 servings

    1 pound lean ground beef (10% or less)
    1 1/4 cups low-sodium salsa
    3/4 cup quick-cooking oatmeal
    1 carrot, shredded
    2 plum tomatoes, diced
    1/2 cup coarsely chopped mushrooms

    1. Preheat the oven to 350. Spray a loaf pan
    with nonstick cooking spray.

    2. In a large bowl, combine the beef, salsa,
    oatmeal, carrot, tomatoes and mushrooms.
    Shape the mixture into a loaf.

    3. Place the loaf in the pan. Bake until
    browned and a knife inserted in the
    center comes out clean and hot, about
    1 hour and 5 minutes. Let stand 10-15
    minutes before slicing.

    Per serving: 183 Cal, 8 g Fat, 2 g Fiber

    Points per serving: 4

    This is a great recipe. Thanks for posting it. It's been around for a long time, but I had forgotten about it. My whole family has enjoyed it.
    Now that I use veg. crumbles in place of hamburgh in just about everything (with no one suspecting), I'm wondering if I could use them in this recipe. I think I might give it a try.
