    Spinach Meatloaf

    1 cup boiling water
    1/2 cup sun-dried tomatoes -- chopped (dry pack)
    1 pound lean ground beef
    1 package frozen spinach, chopped -- defrosted and well drained
    1 medium onion -- finely chopped
    1/2 cup fresh bread crumbs
    1/3 cup skim milk
    1/4 cup Egg Beaters® 99% egg substitute
    2 tablespoons fresh basil -- snipped
    1/2 teaspoon salt -- optional

    Heat oven to 350 degreesF. In small mixing bowl, combine water and
    sun-dried tomatoes. Let stand for 15 minutes. Drain well.

    Combine tomatoes and remaining ingredients in large mixing bowl. Shape
    mixture to fit 8 1/2 X 4 1/2 inch loaf dish. Place in dish. Bake for 45
    to 50 minutes, or until meatloaf pulls away from sides of dish and is
    firm. Let stand for 10 minutes before removing from dish and slicing.

    Vegetable; 0 Non-Fat Milk; 2 Fat.

    This looks good. I've been looking for more spinach recipes. Do you know how much of a difference point wise it'd make to use turkey/chicken instead of the hamburg?

    This would be 4 points with ground turkey/chicken. I intend to try that next time I fix this.

    Hi,

    I just made this for supper,it was very good!! Are the slices suppose to be huge,my slices were a good 1 1/2" thick and I got 7 pieces?? That just looked to good to be true

    Anyway great recipe its a keeper,Thanks

    This sounds great! I'm putting it on next week's menu. DH will be so excited to get meatloaf again.
