Thread: Sweet and Sour Pork SERVES 4, 9pts EA

    2 cups instant whole-grain brown rice
    1 3/4 water (adjust according to package directions)
    COMBINE IN A MICROWAVE-SAFE DISH. COVER AND COOK ON HIGH 7 MINUTES.

    8oz pork tenderloin.
    MEANWHILE...TRIM MEAT. SLICE INTO STRIPS. SET ASIDE.

    1 Onion
    1 bunch broccoli
    ON A CLEAN CUTTING BOARD, CUT VEGETABLES INTO SMALL PIECES, KEEPING PILES SEPERATE.

    2 cans (8oz each) pineapple tidbits, in its own juice, drain-keep juice
    DRAIN THE JUICE INTO A 2 CUP MEASURING CUP. ADD ORANGE JUICE OR WTER TO EQUAL 3/4 cup of liquid.

    1Tbsp cornstarch
    2Tbsp Soy sauce, reduced sodium
    STIR INTO PINEAPPLE JUICE. SET MIX ASIDE.

    1Tbsp oil (canola, peanut or sesame)
    2 minced garlic cloves or 1 tsp
    1 tsp ginger (fresh grated is best)
    HEAT A LARGE SKILLET OR WOK. ADD OIL AND SPICES(GARLIC AND GINGER). THEN ADD MEAT AND ONIONS. STIR-FRY 4 MINUTES OR UNTIL MEAT IS COOKED. STIR PINEAPPLE JUICE MIX AND ADD TO PAN.

    3Tbsp slivered almonds or chopped almonds or cashews
    ADD THE PINEAPPLE, BROCCOLI AND ALMOND SLIVERS. COVER AND LET SIMMER ON MEDIUM-LOW HEAT FOR 3 TO 4 MINUTES. SERVE IMMEDIATELY OVER RICE, WHILE BROCCOLI IS STILL BRIGHT GREEN.

    NOTE FROM ME: I ADDED MORE JUICE, IT ENDED UP BEING 1 1/2 CUPS, AND I USED MORE LIKE 2 TBSP GINGER AND HAVE USED CHICKEN WITH THIS AND ITS WONDERFUL. BON APETIT.
