    Mary's Meatloaf Muffins

    Servings: 24
    Serving Size: 1 muffin
    Points Per Serving: 3

    2 pounds extra lean ground beef (96%)
    8 ounces zucchini -- shredded
    2 eggs
    2 cups Ore Ida Hash Browns
    1 cup cheddar cheese, lowfat -- shredded
    1 package Kraft Stove Top Stuffing Mix (with seasoning packet)
    1/2 cup parmesan cheese
    1 teaspoon minced garlic
    2 teaspoons worcestershire sauce
    1/2 cup Heinz Ketchup
    1/2 cup chopped onions

    Preheat oven to 350F. Mix all ingredients together and use ice cream scoop to make 24 muffins and drop into tins. Bake for 40 minutes or until done.

    Per Serving: 124 Calories; 5g Fat; 7g Protein; 11g Carbohydrate; trace Dietary Fiber; 32mg Cholesterol; 248mg Sodium. Exchanges: 1 Lean Meat; 0 Vegetable; 1/2 Fat; 0 Other Carbohydrates.

    wow meatloaf i hadn't even thought about fixing it. my husband loves meatloaf so this is a great idea for the ground sirlion i layed out this morning.
    that another reason i love these boards. the ideas you get for preparing dinner. [img]smile.gif[/img]

    With the veggies I dont think it would be to dry, When I use turkey in this kind of recipe or chili I also add a packet of low sodium beef bouillon to give it a beefy flavor

    Hi all,

    I was thinking of trying this recipie with ground turkey instead of ground beef, what do you guys think? I'm worried that turkey maybe too dry.

    Dawn, that's a great idea, I'm going to try it first without the bouliion, and if it's too dry, I'll try it again with it, and let you know how it turns out.

    I just use the packet dry with out any liguid.Just for flavor

    Wow what a great recipe! I just made a meatloaf tuesday ( lowfat of course) and I made it with the ww au gratin potatoes! I think next time I will make muffins!The kids will love it~ Thanks [img]graemlins/wave.gif[/img]
