Individual Shepherd's Pies

Packaged instant mashed potatoes (enough for 4 servings)
1 10-oz. package frozen peas and carrots, thawed
1/2 cups cubed cooked lamb or beef
1 12-oz. Jar fat-free beef gravy
1 Tbsp. tomato paste
1/2 tsp. dried basil, crushed
1 Tbsp. finely shredded reduced-fat sharp cheddar cheese

Prepare instant potatoes according to package directions, except omit butter and substitute skim milk for milk; set potatoes aside.

In a mixing bowl stir together peas and carrots, lamb or beef, gravy, tomato paste and basil. Divide among four 12- to 16-ounce casseroles. Top casseroles with the prepared mashed potatoes.

Bake, uncovered in a 350 oven for 30 to 35 minutes or until heated through. Sprinkle with cheese. Let stand 2 to 3 minutes to melt cheese.

Makes 4 servings.
