Thread: Southwestern Beef Supper

    This is so easy and quick that I thought you busy moms would want to try it since kids love it!

    1/2 pound ground beef
    1 small onion, chopped
    3 cups frozen O'Brien potatoes, thawed
    1 cup salsa

    Brown ground beef and onion in large skillet. Pour off any drippings. Stir in potatoes and cook over medium heat for 5 minutes, stirring occasionally. Stir in salsa and continue to cook 10 minutes longer.
    6 Servings: 4 points per serving

    Tried this tonight, and it was delicous. I used ground turkey because it was what I had, and I added sliced carrots because I have an abundance of them right now.

    Also, was very fast. I'll be making it again.
