Taco Tamale Pie

3/4 c. cornmeal
1/4 tsp chili powder
1 can (14.5 oz) fat free chicken broth
1/3 lb extra lean ground beef
1 small onion, chopped
2 cloves garlic, pressed
1 pkg taco seasoning
1/2 c. water
1 c. corn
1/4 c. low fat grated cheddar cheese

Preheat oven to 350 degrees. In medium saucepan, combine cornmeal, chili powder, and broth, stirring over medium heat until very thick, about 10-15 minutes. Spray 8x8 baking dish with cooking spray. Pour cornmeal mixture into pan. Let cool slightly and used moistened fingers to pat mixture into bottom and up sides of pan. Brown beef, onion, and garlic over medium heat. Add taco seasoning and water, simmer for 2 minutes. Add corn. Pour over crust and sprinkle with cheese. Bake 35-40 minutes.

VERY filling and rich. My SO loved this and he usually hates anything remotely healthy.
