    Layered Tortilla Bake


    Makes 8 Servings

    Ingredients

    1 pound VERY lean ground beef
    1 can dark red kidney beans, drained & rinsed
    1 can (28 oz) Italian Classics Kitchen Cut Roma Tomatoes with Basil
    (if you can't find this substitute with any other kind)
    1 can (4 oz) chopped green chiles (mild)
    1 pkg (1.25 oz) McCormicks 30% less sodium Taco Seasoning
    1 pkg (10 oz) corn tortillas (12, 6-inch tortillas) -
    Try Diane's Corn Tortilla's Thin (1 PT for 2)
    1 cup (4 oz) shredded low fat cheddar cheese

    Preheat oven to 350 degrees. Brown ground beef in large nonstick skillet;
    drain well. Mix in beans, tomatoes, chiles and taco seasoning mix. Reduce heat;
    simmer 5 min. Spray 9 x 13 " baking dish with nonstick cooking spray. Cut
    tortillas in half; place half of them in bottom of baking dish, overlapping.
    Spoon half of beef mixture evenly over tortillas. Cover with remaining
    tortillas and then remaining beef mixture. Top with cheese. Cover; bake 25 min.

    POINTS: 5.5

    PER SERVING: 280 Calories, 9 g Fat, 6 g Dietary Fiber

    Freezer Tip: Use two 8" x 8" baking pans. (cut tortillas into 4ths so
    they fit better). Cover with foil and freeze. Place in 350 degree oven
    straight from freezer. Bake 1 hour or until internal temperature reaches 160 degrees.

    I tried this dish last night. It is delicious! We added a little onion (family loves onion). We had the left overs today and it was just as good today if not better.

    I will definitely make up a bulk supply and freeze for those quick dinners!

    This is the best dinner dish I have had since being on WW. It's definitely a keeper. I topped mine with salsa and light sour cream. Incredible!!!

    I tried this on Tuesday- and I really loved it. I am used to more meat filling, but I think it tasted great!

    Have you tried it with the veggie crumbles? It looks like browned hamburg. I use it in alot of dishes and my DH likes it as much as I do. Or if you need the beef mix half and half that works too.

    I made this tonight using the soy crumbles, and it was delicious. I haven't worked out the points yet, but it has to be lower than using regular meat.

    I tried this the week before Christmas (forgot to post). This was SO GOOD. My DH LOVED it. I took some to work and everyone wanted the receipe! They couldn't believe it was WW. This is definately a keeper. Thanks! [img]graemlins/wave.gif[/img]

    This is so good!!! YUM! Thank you for posting. I have already made it twice and the entire family loves it - the baby, the picky 4 yr old, etc. I would even make it for company - it's that delicious!
