This is an entree, not a side dish. Believe me it is very filling.

    4 c unpeeled baking potatoes,thickly sliced
8 oz ground turkey or beef 90% lean or better
    1 c chunky salsa
    1/4 c FF sour cream
    1/2 c (2 1/4oz) RF cheddar cheese, shredded

Preheat oven to 350° Place potatoes in an 8 x 8 baking dish. Spray potatoes with butter-flavored cooking spray. Bake until tender, about 30 to 45 minutes. In a skillet sprayed with cooking spray, brown meat. Stir in salsa. Lower heat. Simmer until meat is cooked through. When serving place 1/4 of potatoes on each plate, spoon meat mixture evenly over potatoes. Top with 1 tablespoon sour cream and 2 tablespoons cheese.

Barbara - Thanks for what looks like a great recipe. I have everything needed to make this, and I will make it this week.

I will let you know how we all liked it.

    Thanks again -
