Veal Saltimbocca

Ingredients:

3 ounces Lean veal -- cut 1/4 inch thick
1 tablespoon Dry sherry
Salt and pepper -- to taste
1 tablespoon Fresh sage -- (approximately 2 leaves)
1/2 ounce Prosciutto -- (one paper thin slice)
1 ounce Provolone cheese -- sliced thin

Directions:
1. Preheat oven to 400.

2. Pound veal to 1/8" thick with flat side of a meat mallet.

3. Spray a skillet with cooking spray and brown the veal on both sides on high heat.

4. Remove skillet from heat and transfer veal to a baking dish that has been sprayed with cooking spray.

5. Add sherry, salt, and pepper to pan and swirl.

6. Pour sherry over veal.

7. Arrange sage leaves over veal.

8. Lay prosciutto slice on veal and top with cheese.

9. Bake ten minutes or until cheese melts.

10. Transfer veal to plate and pour sauce over top to serve.
