I followed a link off the Weight Watchers newsletter and got this. THREE points too...great summer lunch! Or perhaps two of them for dinner??

Grilled Beef Fajitas

2 medium onion(s), Vidalia, thickly sliced
2 medium summer squash, yellow, sliced lengthwise
1/8 tsp table salt, or to taste
8 oz lean beef round
1/8 tsp black pepper, or to taste
1/2 cup(s) salsa
4 medium fat-free flour tortilla(s)

Preheat grill or grill pan. When hot, grill onion slices until soft and browned, about 5 minutes. Coat squash slices with cooking spray, salt them and grill until soft, about 3 to 5 minutes.

Season steaks with salt and pepper; grill until cooked through, about 3 to 5 minutes. Remove from grill and slice into strips.

To assemble fajitas, put 2 tablespoons salsa on each tortilla, top with onions, squash slices and beef. Roll and eat.
