Lamb en Croute (Courtesy of Pure Points Cookbook)

Serves 2 (290 calories per serving) Preparation time 10 minutes. Cooking time 25 minutes. Freezing recommended.

175g (6oz lamb loin fillet
3 spring onions, trimmed and sliced
1 small garlic clove, crushed
1 teaspoon soy sauce
15g ( oz butter)
1 teaspoon wholegrain mustard
3 sheets filo pastry
salt and freshly ground black pepper.

1. Preheat the over to Gas Mark 6 / 200 deg C / 400 deg F
2. Make a horizontal slit through the lamb. Place the spring onions and garlic in a small pan with the soy sauce and cover. Heat gently for 1 minute until the spring onions wilt. Spoon into the slit in the lamb and season well.
3. Mix together the melted butter and mustard and use to brush over each sheet of filo pastry. Stack together and then use to wrap around the lamb fillet, tucking the edges under. Lift on to a non-stick baking sheet and brush with any remaining butter and mustard mixture.
4. Cook for 25 minutes and then serve carved into slices with freshly cooked vegetables.
