Thread: Skillet Liver,Peppers, and Onions

    This makes two servings

    1 cup each sliced onions(separated into rings)and bell peppers(rings)

    1/2 teaspoon marjoram leaves

    3 tablespoons all-purpose flour

    1/2 teaspoon salt

    Dash ground pepper

    10 ounces calf liver,thinly sliced

    1 tablespoon plus 1 teaspoon reduced-calorie margarine

    1 1/2 cup cooked long-grain rice (hot)

    Spray 10" nonstick skillet with cooking spray(Pam,etc);add onion and bell pepper rings and cook, stirring occasionally,just until tender.Remove vegetables from skillet and sprinkle with marjoram;set aside and keep warm.
    On a sheet of wax paper or a paper plate combine flour,salt,and black pepper;dredge liver in seasoned flour,using the entire mixture to coat all sides of liver slices.
    In same skillet heat margarine until bubbly and hot ;add liver and saute briefly( just until golden brown on both sides). Remove liver to serving platter and top with onion and pepper rings.Serve on rice.

    Per Serving: 495 Calories,34grams protein,11 fat,425 cholesterol. It is from an older WW cookbook and has no fiber listed, but do the math to see how many points this will be .If you serve it on brown rice, I am sure you will have more fiber.

    Wow Mona, thanks for replying to my liver/onions recipe request, HOWEVER, 495 cal per serving? My points finder puts this little dish at approx 11 points if I am correct. So would any of you consider this a good choice for a meal? Seems like calories are way too high, but since I am new, don't really know if this is what I should consider "worth the points"? Hmmmmm, now don't know what to do, lol.

    I thought so to "gg"
    but it was in an older WW cookbook, and that is counting the rice, but in our Supermarket Companion it says that 4oz. of beef liver and onions(homemade) is 7 points so I guess thats is about right if you add in the points for the rice, of course you might not want to have rice with yours, it is the only one I have found, I will keep looking Mona<><

    Mona, you are such a sweetheart for doing this for me, especially since you hate the stuff, lol. I appreciate it so much. Never thought to look in my companion, duh! Will forget the rice and just have the liver and onions, thank you. Just call me liver breath tomorrow! Tee hee hee.

    I guess I would never think of eating rice with liver and onions!

    So, I looked up the raw liver in my Book of Food Counts.

    It listed for 4 oz, so I multiplied by 2.5 to get to 10 oz:
    Calories 405
    Fiber 0
    Fat 10.75

    This puts the 10 oz of liver at 9 points.

    Add 1 point for the onion, 1 point for the flour, 2 points for the reduced calorie margarine.

    Total: 13 points for 2 servings (6.5 points each) without the rice.

    I don't think that is too much. I could have lots of green veggies or a salad to go with that and have a very nice meal.
