    Layered Tortilla Bake

    1 pound extra lean ground beef (92% lean)
    1 can kidney beans, canned -- dark red, drained & rinsed
    28 ounces chopped tomatoes -- canned, with basil
    4 ounces chopped green chiles -- mild
    1 package taco seasoning mix -- McCormick's 30% less sod.
    10 ounces corn tortillas -- 12, 6-inch tortillas
    8 ounces shredded lowfat cheddar cheese

    Preheat oven to 350 degrees. Brown ground beef in large nonstick skillet; drain well. Mix in beans, tomatoes, chiles and taco seasoning mix. Reduce heat; simmer 5 min. Spray 9 x 13 " baking dish with nonstick cooking spray. Cut tortillas in half; place half of them in bottom of baking dish, overlapping. Spoon half of beef mixture evenly over tortillas. Cover with remaining tortillas and then remaining beef mixture. Top with cheese. Cover; bake 25 min.

    Freezer Tip: Use two 8" x 8" baking pans. (cut tortillas into 4ths so the yfit better). Cover with foil and freeze. Place in 350 degree oven straight from freezer. Bake 1 hour or until internal temperature reaches 160 degrees.

    This is very good. At 5 points for a good-sized serving, it's filling and tasty. Easy to make, too.

    I have made a dish very similar to this for years. Sometimes I will cut back on the hamburger and/or cheese and use Fat Free Cream Cheese (slightly blended with 1-2 tablespoons milk. It give it a creamy texture. On one of the layers I would spread the cream cheese and top with the meat mixture. Just a different take on a great dish!

    The Layered Tortilla Bake turned out very well. It baked evenly and was easy to remove from the pan. All in all, it was easy and tasted great!

    My substitutions:
    96% lean ground beef
    10- 1 pnt tortillas
    fat free shredded cheddar cheese (added when it was about done)
    added black olives

    I made this for dinner the other night and it was awesome-- Just had another serving for lunch. Separated and froze the rest of the servings!!

    The only thing I did different was I made the pan into 6 servings and it came out to 6.66 pts a serving-- which I rounded up to 7 pt. but to me having a nice big serving was worth it!

    Very good and filling recipe!

    Ok, well it's on the oven right now--hope it turns out good! By the way, was I supposed to drain everything including the tomatoes and chiles? I didn't...it looked ok...lol

    So...it didn't turn out so good. I thought it was too spicy and DB said it was too bland. I would try this again and make a few changes. Maybe use 2 packets of taco seasoning mix, no green chiles and see how it turned out.

    I still like this recipe tho, so thanks!

    This was good. I didnt use the taco seasoning mix, I just make my own. Chili powder, cumin, garlic powder, salt and pepper. I would drain the tomatoes next time.

    DH even liked it.

    I made this last night and it was great. My DBF said that it was the best thing he's ever eaten! It was good, but I think he was just really hungry too. lol. I'll definitely make it again. I think I will add about 1/2 packet more seasoning to it next time though for a little stronger flavor.
