Swedish Beef and Cabbage Rolls - 4 Points

1/2 cup long-grain white rice
12 cabbage leaves
1 pound extra lean ground beef, 96% lean
1 egg -- slightly beaten
1/4 cup skim milk
1/4 cup minced onions
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 ounces tomato sauce -- reduced sodium
1 tablespoon molasses
1 tablespoon lemon juice
1 tablespoon worcestershire sauce -- reduced sodium

1. Cook the rice according to the package directions. Let cool.

2. Preheat the oven to 350 degrees F. Coat a 13"x9" baking dish with no-stick spray.

3. Bring a large pot of water to a boil. Cook the cabbage leaves for 3 minutes, or until they are limp; drain well.

4. In a large bowl, combine the cooked rice, beef, egg, milk, onions, salt, and pepper; stir well. Place about3 tablespoons of the meet mixutre in the center of each cabbage leaf; fold int he sides and roll tighly. Place the cabbage rolls seem side down in the baking dish.

5. In a medium bowl, combine the tomato sauce, molasses, lemon juice, and Worchestershire sauce. Pour over cabbage rolls.

6. Bake for 1 hour, or until the sauce is thick and the beef is no longer pink. Check by inserting the tip of a sharp knife in 1 roll.

NOTES : Kitchen Tip: To remove the cabbage leaves without tearing, cut out the core with a sharp knife. Cutting away part of the thick rib of each leave allows the cabbage to fold around the filling more easily. Yu can use either green cabbage or Savoy cabbage fo this recipe.
