Ham & Cheese Casserole

Amount Measure Ingredient -- Preparation Method

2 cups extra lean ham -- cooked and diced
6 medium potatoes -- cooked and diced
1 teaspoon seasoned salt
2 cups shredded lowfat cheddar cheese -- Sargento Light
1 can lowfat cream of mushroom soup -- Campbell's 98% FF
1 can lowfat cream of celery soup -- Campbell's 98% FF
seasonings to taste: salt, pepper, Lawry's

Lightly mix ham and potatoes. Grease flat 2 qt. baking dish; add alternate layers of meat mixture, cheese and soup. Reserve 1/4 cup cheese for top. Bake at 350 degrees for 40 minutes. Add 1/4 cup cheese during last 10 minutes.

When I used "shredded lowfat cheddar cheese" in place of the Sargento's light brand cheese, the nutritional analysis in MasterCook came out to 9 Points. So, check the labels for light cheeses with less fat & calories than Sargento's (although Sargento's is very tasty & worth the extra point!).
