My family loved this! There was no grease dripping off at all. I went to the butcher and asked him to ground the leanest sirloin he could find. He glady found what I needed and even cut off any fat he could see which was not much. The results were virtually fat free meat and it is wonderful.

Mashed Potato-Stuffed Meatloaf

3/4 lb. lean ground sirloin
2 slices whole wheat bread broken into small pieces
1 medium onion, diced
1 tsp. mustard
1 Tbs. Worcestershire sauce
Dash of Tabasco sauce
1 pkg. onion soup mix
4 large egg whites
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. Italian seasoning
1/2 cup unseasoned bread crumbs

Filling:

2 medium potatoes, peeled and diced
1/4 cup skim milk
1/8 tsp. salt
1/8 tsp. pepper

Preheat oven to 350. In bowl thouroughly combine all ingredients; set aside. Place all filling ingredients in a pot and heat until potatoes are tender. Cool potatoes, completely; mash and set aside. Spray 9 by 5 inch bread pan with cooking spray; place 1/2 of meat mixture in pan. Spread mashed pototoes over, leaving 2 inches space on all sides. Place remaining meat mixture over. Bake 1 1/2 hours or until meat is cooked through.

Makes 4 servings with 354 cal. 6 g. fat and 3 g. fiber so a total of 7 points per serving
