2 t olive oil
1 medium red bell pepper cut into 1/4" strips
1 medium yellow bell pepper cut into 1/4" strips
1 medium green bell pepper cut into 1/4" strips
1 large spanish onion cut into 1/4" slices
2 c cooked lean roast beef strips
2 garlic cloves minced
1/2 t dried rosemary leaves, crumbled
1/2 t salt
1/4 t black pepper
1 T red wine vinegar

place large nonstick skillet over medium heat 30 seconds; add oil and heat 30 seconds more. add bell peppers and cook, stirring frequently, 3 minutes. add onions and cook about 5 minutes more until the onion is softened.

add beef, garlic, rosemary, salt and pepper; cook stirring constantly 3 minutes. stir in vinegar and cook 1 more minute. divide among 4 plates and serve.
