    Hello!

    I just thought I'd share this recipe- I made it today and it's really tasty! I used a reduced fat peanut butter with 77 calories and 4.7 grams of fat per tbs, some reduced fat peanut butters have more fat per tbs than others so check first.

    Peanut Butter Oatmeal Peanut Butter Chip Cookies

    1 Egg
    1 Egg white
    2/3 cup Brown sugar
    2 tablespoons canola Oil
    1/2 cup reduced fat Peanut butter -- creamy
    1/2 teaspoon Vanilla
    1 cup Flour
    1/2 cup Oats -- old fashioned
    1/2 teaspoon Baking soda
    1/2 cup peanut butter chips -- my addition

    Preheat the oven to 350 and spray 2 baking sheets with Pam. Beat the egg,
    egg white, brown sugar, oil, peanut butter and vanilla with an electric
    mixer until smooth. Add the flour, oats and baking soda and beat until
    well mixed. Drop the batter by rounded tsp about 2" apart on baking sheets
    and bake for 12 to 15 minutes. Cool on wire rack.

    Per Serving (excluding unknown items): 53 Calories; 2g Fat (41.1% calories
    from fat); 1g Protein; 6g Carbohydrate; .5 gr Dietary Fiber

    NOTES : 1 points without chips or with chips

    We're going to give those a try tonight. My guys have been wanting cookies and I've been resisting making them. I'll let you know how they turn out!

    I made these with a couple of changes. Used 1/2 whole wheat flour, 1/2 white, left out the oil and used regular peanut butter. I doubled the batch, ran it through MasterCook, 78 cookies = 1 pt.

    I also baked them only 6 minutes, until they were lightly browned, and they came out chewy and delicious!!
