This recipe is super easy, low point, and tastes deliciously fancy. You could add any veggies you like, mushrooms and fresh basil would also go very nicely.

Creamy Sundried Tomato Rose Sauce

Serves 3-4
2 points each serving

1 can red. fat cream of mushroom soup
1 can sundried-tomato-flavoured chopped tomato recipe starter
1/2 onion, coarsely chopped (I like to use a red vidalia)
1 each red and green pepper cut in strips
2 cloves minced garlic
non-stick spray
3 servings cooked pasta

Spray a large skillet with non-stick spray and sautee the peppers and onions until soft.
Add garlic and sautee a minute or so
Stir in condensed soup, and tomatoes and stir until bubbling hot.
Serve over pasta with fresh ground pepper.

Notes:
I like whole wheat penne for this one.
I'm sure it would be good with plain canned chopped tomatoes, but the extra sundried tomato flavour was delicious.
