This recipe is not really really low in points, but it is easy and delicious.
An excellent meal for a crowd, or for lunches for a week!
Reheats nicely in the microwave.

Quick Vegetarian Lasagna
8 servings, 7 points each

1 jar low fat pasta sauce, preferably spicy (6)
2c of vegetarian ground beef substitute such as Yves (7)
1/2c water
2 cloves crushed or chopped garlic
2c (1 container) 1% cottage cheese
1 egg
fresh pepper
1 10oz pkg chopped frozen spinach, thawed and drained thoroughly
8 whole wheat lasagna noodles, uncooked
2c shredded low fat mozzarella

Preheat oven to 350F.

1 Mix first 4 ingredients in a medium bowl.
2 Spread 3/4c of the sauce mixture on the bottom of a 9x13" pan.
3 Mix cottage cheese, egg, pepper, and spinach.
4 Put 4 noodles over the sauce
5 Spread with 1/2 of the cottage cheese mixture
6 Then dollop on 1/2 of the sauce
7 Sprinkle on 1/2 of the mozzarella
8 Put the remaining noodles on top and repeat steps 5-7, finishing with cheese.
9 Cover with foil and bake 45 minutes.
10 Remove foil and bake an addition 15 minutes until cheese is lightly browned.
11 Let stand 10 minutes before serving.

May need to increase baking time if not completely thawed from frozen.
Check center to see if it is hot before removing foil.
