Thread: Portabella Stroganoff

    This recipe uses the Whole Wheat White Sauce Mix I posted in the "Misc" category. (I'll post it again at the bottom of this recipe.) The portabella mushrooms have a great meaty texture, you won't miss the beef in this dish.

    Serve over egg noodles.

    1 T. lite margarine
    12 oz. portabella mushrooms, cut into bite-size pieces
    1/2 c. chopped onion
    3 cloves garlic minced
    1 14 oz can fat free beef broth
    1/4 c. dry white wine
    1 T. steak sauce
    1/2 c. whole wheat white sauce mix
    1/2 c. fat free sour cream
    Salt & pepper to taste
    Egg noodles (choose your portion size)

    Add egg noodles to a pan of boiling water and cook according to package directions. Melt margarine in large nonstick skillet. Add mushrooms, onions and garlic and saute until cooked through. Remove contents from pan onto a plate and set aside. Add beef broth, white wine, and steak sauce to the skillet and heat until bubbly. Whisk in Whole Wheat White Sauce mix until combined, then add mushroom mixture into the sauce. Simmer for about five minutes. Stir in sour cream and bring to a simmer, then stir cooked egg noodles into sauce and it's ready to serve.

    Entire recipe (sauce only): cal = 345; fiber = 6; fat = 6
    This makes 4 average sized servings at 2pts ea. OR 3 generous servings still 2pts!

    (I cooked 9 oz. egg noodles and added to sauce, then divided into three large servings at 8 pt. each.)

    Whole Wheat White Sauce Mix
    1 c. whole wheat flour
    2 1/2 c. nonfat dry milk
    1 T. salt
    Measure into a ziploc bag. Seal bag and shake to combine ingredients.
    1/2 c. = 137 cal; 1.7 g. fiber; 0 fat = 2.5 pts.

    Angela: This sounds terrific and I'm planning on making it tonite.

    Do you chop up the entire portabello for this or just the caps?
