Salsa Pasta
Original recipe
1 cup frozen kernal corn
1 cup salsa
1 small green pepper chopped (about 1/2 cup)
1 can undrained tomatoes

Heat ingredients over medium heat. Simmer 5 minutes.

My modified Cajan Kick Recipe
1 can of tomatoes (pureed with hand blender)
1 clove of garlic
1 can of kernal corn
1 cup of salsa
1/2 cup of green pepper
2 Tbsp of taco seasoning
1/2 cup of onion
4 oz of left over chicken

This made 4 servings

Simmer all ingredients for 1 hour. When I served it on my pasta I added 2 tbsp of ff sour cream mixed into sauce. This gave the sauce a creamy texture for nominal points. If it was just me I would mix the sour cream into sacue at end, but dh don't like sour cream so I did it on my individual portion.
