    Maureen's Lasagna

    Spaghetti sauce ( I make homemade)
    3 lbs lf ricotta cheese
    1 1/2 lf lbs mozzerella cheese
    2 lbs turkey sausage
    2 lbs ground turkey
    1 1/2 lbs lasagna noodles

    Cook ground turkey in pan and seperate it as it cooks making it loose.
    Cook turkey sausage, cut it slices when done.
    Mix sauce,cheeses,and ground turkey together in bowl.
    Have sausages cut up on side.
    Cook lasagna noodles according to directions on box, once cooked run cold water in pot. (to keep noodles seperate.

    Put some plain sauce on bottom of pan,(I use aluminun pans)layer with noodle,cheese mix,and place some sliced sausages on top. Continue to do this ending with cheese layer. This will give you two pans of lasagna.
    Cook in oven at 325 degrees for aprox 30-45 min.This can be done a couple of days ahead of time,(as a matter of fact it is usually the best when cooked ahead and then reheated.)

    On day you want to serve heat in a pan of water(keeps bottom from burning) in a 325 oven for about an hour. I usually dip a knife in and if it is hot all the way down I know the lasagna is hot enough to serve. Pts vary according to how many slices you get out of each pan.
    I tend to use our book as a guide using those pts.
    So I know that I use less with my lasagna (I have never really broken it down) I make this meal once a yr at Christmas.

    I am one of those fly by the seat of my pants type of cook. I am still used to cooking in quantity. I haven't been to sucessful in cooking for two.
