    I would sneak spinach into this one and possible some shredded and/or finely chopped up carrots. Yummy! I love your motto at the end of your signature! I thought that was awesome! Donna

    Tonight I finally tried the 9 week recipe card lasagna.
    I changed a veggie.And it was very good.
    This is the recipe

    Makes 6 servings 6 pt per serving

    1 jar (28 oz) spaghetti sauce
    6 uncooked lasagna noodles
    1 container(15 oz) fat-free ricotta cheese
    1-2 cups sliced or chopped raw veggies such as mushroom,broccoli,and bell pepper.
    1 package (8 oz)shredded low-fat mozzarella cheese

    1. Pre heat oven to 375F .Spray 11x7 inch baking dish with non stick cooking spray.Spread 1/3 of the sauce on bottom of dish,arrange 3 noodles in a single layer over sauce.Top with another 1/3 of the sauce,all of the ricotta cheese and the veggies and 1/2 of the mozzerella cheese,then add the remaining noodles in a singele layer.Spread evenly with remaining sauce.
    2. Cover dish with foil,bake until noodles are tender and mixture is hot about 1 hour.Sprinkle with remaining cheese ,bake uncovered 5 more minutes .Let stand 5 minutes before cutting.

    Nurtional info.310 cal. 7.2g fat 4.6g fiber

    I used mushrooms and red bell peppers.

    I got carried away one day and used broccoli, mushrooms & frozen spinach. I know I had more than 2 cups of veggies but they were all free ones.
    It sure is quick & easy to make.
    When I used the mushrooms, I put them on a microwave plate and nuked them for about a minute total, to remove some of the water. (I was afraid it would be awful runny with the moisture from the mushrooms and the frozen spinach).
    This is one meal everyone has enjoyed and its great to carry for lunch also.
