I sort of made this up and it came out so well, I thought I'd share it.

Spicy Turkey Pasta Dish
Serves 6 generously

1 lb lean ground turkey breast
1 onion, chopped
1 tsp minced garlic
1 lb mini penne, or other small pasta tube
1 28 oz can chopped Italian tomatoes (I used Pastene brand chunky tomato)
1 6 oz can tomato paste
1/2 tsp crushed red pepper
1 tsp fennel seed
1 tsp oregano
salt and pepper to taste
2 cups fresh baby spinach leaves

Spray a large frying pan with cooking spray. Cook onion until transluscent; add turkey and brown. Drain off accumulated liquid. Add tomatoes, tomato paste, and seasonings; cover and simmer for 20 minutes (while cooking pasta)

Cook pasta as directed on package and drain. Stir into meat sauce, add spinach, cover and cook on low for 2-3 minutes, or until spinach wilts a bit and flavors are blended.

It's wonderful

I came up with 7 points a serving.

As for the serving size, it's a bit less than 2 cups.

Time to make this one again

I made a variation on it a couple of weeks back that I just didn't care for.

Back to the original.
