Thread: Sausage & Pepper "Lasagne"

    I made this for dinner last night, and it was great. Everyone loved it.

    This great recipe comes from ww "Simply the Best Italian" cookbook....a really neat recipe book.

    2 links italian-style turkey sausage (about 1/4 pound) casings removed
    1/2 cup chopped seeded red bell pepper
    1/2 cup chopped green bell pepper
    1 medium onion, chopped
    1 teas dried oregano
    1/4 teas. fennel seeds, crushed
    1, 14.5 oz., can crushed tomatoes
    6, lasagne noodles
    1 cup part-skim ricotta cheese
    1/3 cup shredded, part-skim mozzarella cheese
    1/4 cup egg beaters
    2 T. parmesan cheese
    1/8 teas. crushed red pepper

    1. Spray a nonstick saucepan with nonstick spray and set over med.-high heat. Add the sausage, both bell peppers, the onion, 1/2 teas. of the oregano, and the fennel seeds. Saute, breaking apart the sausage with a spoon, until it is browned and the vegetables are tender. Add the tomatoes and bring to a boil. Reduce the heat and simmer, stirring occasionally, until thickened, about 20 mins..

    2. Cook the lasagne noddles according to package directions. Drain & lay flat on a sheet of foil or wax paper. Preheat the oven to 350.

    3. Combine the ricotta, mozzarella, egg, Parmesan, crushed red pepper and the remaining oregano. Spread about 3-T. over each lasagne noddle, then roll them up. Spread 1/2 cup of the sauce in an 8" square baking dish. Put the lasagne rolls, seam-side down, in the baking dish, then spoon the rest of the sauce over them. Cover with foil and bake until the sauce is bubbling about 30 mins. Let stand 10 mins., before serving.
