Thread: chicken & fettuccine

    I tried this last night w/ "do this one again" comments from everyone in the family. I used FF Half & Half instead of the cream & did not put in the frozen baby peas w/ a total of 9 points per serving. Next time I'll also increase the amount of tarragon & lemon peel.

    prep time 10 minutes
    cooking time 15 minutes
    makes 6 servings

    1 T oil
    1 lb boneless, skinless chicken breast, diced in 1 inch pieces
    1 t salt
    1/2 C chopped onion
    1 can FF chicken broth
    1/8 t tarragon
    1/2 lb asparagus, cut into 1 inch pieces
    1/4 C heavy or whipping cream (I used FF half&half)
    1/4 lb snow peas, trimmed
    1 C frozen baby peas (I didn't use these)
    1/4 t grated lemon peel
    2 pkgs (9 oz each) fresh fettuccine, cooked
    2 T snipped fresh chives

    Heat oil in lg skillet over high heat. Add chicken; sprinkle w/ salt, cook, stirring, til golden, 5 minutes. Set aside.
    Add onion to skillet, cook til tender, 3 minutes. Add broth, tarragon; bring to boil. Add asparagus, cook just til tender, 3-5 minutes. Stir in cream, return to boil. Add snow peas, baby peas & chicken; cook 2 minutes more. Stir in lemon peel, toss w/ hot pasta. Sprinkle w/ chives.

    This sounds good! You could always minus three poitns right off the top by using cooking spray instead of the 1 tablespoon of olive oil. I wonder if light cream would work as well as the heavy cream, to save points?

    Hi Gillie - using the spray would deduct 1/2 pt per serving - I've figured this using the cream & the baby peas & the oil for a total of 9 points per serving. Then I had CyberG figure it on Mastercook, using FF half&half & no peas & she came up w/ 9 also. So, I'm guessing it's on the edge of 9 - so if you use spray instead of oil I think it'd be safe to say 8 points.
