Thread: Portabella Mushroom Recipe 4 pts per serving!!

    It is VERY easy and VERY yummy!!!

    4 cups of uncooked chelesterol-free noodles

    1 tablespoon of margarine or Pam

    3/4 pound of fresh portabella mushrooms, cut into 2x1/2-inch strips

    1 medium onion, chopped (1/2 cup)

    1 clove of garlic, finely chopped

    3/4 cup beef broth

    2 tablespoons ketchup

    1/2 cup non fat sour cream

    Fresh ground pepper

    Chopped fresh parsely, if desired

    Cook and drain the noodles as directed on the package--except omit the salt. While noodles are cooking, melt the margarine (or warm up the pan with pam) in a 12 inch non-stick skillet over medium heat. Cook mushrooms, onions and garlic in margarine (or Pam), stirring occasionally, until mushrooms are brown and tender.

    Stir in broth and ketchup into mushroom mixture. Cook 5 minutes, stirring occasionally. Stir in sour cream. Serve over noodles. Sprinkle with pepper and parsely.

    This receipe is from the Betty Crocker's Healthy New Choices Cookbook. It is in a binder and has all kind of great receipes!! I bought it at Barnes and Nobles and spent like $25.00 on it--I LOVE IT!!! Worth the money, definatly!!

    I have a on this one - the recipe says 4 cups UNCOOKED noodles, but the servings are 4 1 cup servings? Wouldn't 4 cups of UNCOOKED noodles, cooked, PLUS the mushrooms come up with a much higher yield than 4 cups, cooked???

    Just wondering because this sounds SO good and I want to make sure I've got it right!!

    Good question! It does say it make 4 servings on the receipe. So I did 1 cup as one serving.
