    This has become our new favorite pizza. One pita pizza is VERY filling. Try to have two at your own risk

    Note: The recipe below is for ONE pita pizza.

    Garden Pita Pizza--3 Points

    Amount Measure Ingredient -- Preparation Method

    1/3 cup button mushrooms -- thinly sliced
    1/3 cup zucchini -- thinly sliced
    1/8 teaspoon garlic powder
    1/4 cup tomato sauce
    1 6" diameter F-F whole-wheat or white pita
    2 tablespoons scallion -- finely chopped
    1 tablespoon fresh basil -- slivered
    1/4 teaspoon dried oregano
    1 large pitted black olives -- chopped
    2 tablespoons shredded nonfat mozzarella cheese
    1 tablespoon nonfat parmesan cheese

    1) Preheat the oven to 425 degrees Fahrenheit

    2) Place the mushrooms and zucchini in a large no-stick skillet. Coat with no-stick spray. Cover and cook over medium-high heat for 2 to 3 minutes, or until the mushrooms start to release their juice. Remove the cover and cook, stirring occasionally, for 1 to 2 minutes, or until the mushrooms and zucchini are golden. Stir in the garlic powder and 2 tablespoons of the tomato sauce. Set aside.

    3) Place the pita bread on a baking sheet. Bake for 1 minute to crisp. Remove from the oven and spread with the remaining 2 tablespoons tomato sauce. Spoon on the mushroom mixture. Sprinkle with the scallions, basil, oregano, olives, mozzarella and Parmesan.

    4) Bake for 8 to 10 minutes, or until the cheese melts and is golden.

    Julie's Note: We prefer putting the mozzarella on top of the tomato sauce and then putting the other ingredients on top of that, similar to a traditional pizza.

    I make this alot but not as fancy. I use a whole wheat pita cover w/ a Tbls. pizza sauce and 2 tablespoons shredded nonfat mozzarella cheese then add green/red peppers, touch feta cheese and mushrooms. Not too shabby for 3 pts
