    Homemade Pasta

    2 cups all-purpose flour
    1 cup nonfat liquid egg substitute

    Put the flour into the bowl of a food processor. Pulse while drizzling the egg substitute through the feed tube.

    Turn the soft ball of dough out onto a floured board and knead a few times into a single ball that is glossy and elastic.

    Enclose the ball in plastic wrap and set aside for 30 minutes.

    Roll out and cut the dough into fettuccine.

    That seems like an awful lot of eggs for 2 cups of flour. Will the dough be dry enough? My recipe calls for 2 1/2 cups flour, 2 eggs, 2 t. oil and 1/3 cup of water. Just curious.

    I'm checking the recipe now, and in the little tip column net to the recipe, it says to make sure that the egg substitute you use is one made from only egg whites and a little coloring.
    So let's see...

    2 egg whites substitute for 1 egg and your recipe calls for 2 eggs: 4 egg whites= 1/2 cup (or at least 1/2 cup liquid egg whites = 4 egg whites)

    There is no other liquid ingredient called for in this recipe, and yours call for a tiny bit of oil and 1/3 cup water... hmm...

    I still think it would work, but maybe depending on the weather that day you might need more flour? Kind of like bread?

    Anyone else?
